There is a recipe for every state and Washington DC. Each recipe was tested and then adjusted to conform to the favorite tastes of that state. The vegan deviled eggs were added because my vegan friend complained that what she missed most after becoming vegan was deviled eggs that tasted like eggs. So, the vegan recipe was put together and then taste tested. My tasters gave this recipe a thumb-up. In addition, the avian flu drove the egg prices and availability sky high. This gave an additional option to a home chef as well as a vegan.
